Whole Wheat Pancakes

Whole Wheat Pancakes
Trying to increase your fiber? These pancakes get an added fiber boost by using whole wheat flour. Try them to add variety to your healthy breakfast options.
 
3/4 cup whole wheat flour
3/4 cup all-purpose flour
1/4 teaspoon salt, optional
1/2 teaspoon baking powder
3/4 teaspoon baking soda
2 tablespoons sugar
1 egg, lightly beaten
1 1/2 cups buttermilk
1 tablespoon vegetable oil
1/4 teaspoon vanilla

1. In a large bowl, mic together dry ingredients
2. In another bowl, mix egg, buttermilk, oil and vanilla
3. Add liquid mixture to dry ingredients. Stir just until moistened
4. Spray griddle with cooking spray and heat over medium heat.
5> drop 1/4 cup batter on griddle, and cook until covered with bubbles and edges are slightly dry. Turn and brown.

JUS PEAR BUAH NAGA

200 ml air masak /mineral

MURTABAK TELUR CAMPUR SAYUR

Bahan-bahan:
100g daging lembu tanpa lemak, dicincang dan ditumis
4 bji telur itik
50g daun bayam, hiris halus
1 batang daun bawang dihiris halus
1 biji bawang bombay, hiris nipis
20 keping kulit popiah
Minyak secukupnya
1 sudu teh serbuk lada putih
1/2 sudu teh serbuk pala
1 sudu garam
 
Cara Membuat:
1. Campur daging lembu cincang yang sudah ditumis dengan semua bahan lain. Kacau rata.
2. Ambil sekeping kulit popiah , isi adunan telur secukupnya. Lipat semua sisinya sehingga berbentuk segiempat (atau ikut citarasa).
3. Goreng dalam minyak yang panas sehingga kuning kecoklatan. Ketika membalik-balikkan,tusuk-tusuk murtabak menggunakan garfu.
4. Angkat dan toskan
 
Tip
Murtabak ini boleh dimakan oleh pesakit diabetes mellitus yang kolesterolnya normal dan tiada obesiti. Selain digoreng, murtabak ini juga boleh dikukus.

Pear Perfection

Ingredients

Sable a Choux 1 portion of green coloured sable pastry

Choux Pastry100g butter, plus extra ½ block of butter to grease tray
5g caster sugar
105ml water
135ml milk
¼ teaspoon electric green colour
5g salt
135g plain flour
3 eggs
1 egg yolk

Pear Vanilla Creme Patissiere150g pear puree
150g apple juice
1 teaspoons vanilla bean paste
4 egg yolks
50g cornflour
75g caster sugar
20g butter, diced at room temperature

Pear Gel250g pear puree
20g caster sugar
½ teaspoon pectin NH
¼ teaspoon gellan 

Green Chocolate Squares1 sheet green chocolate
Pear Mousse80ml thickened cream
250g of the pear vanilla creme patissiere, reserve remaining mixture
180g mascarpone

Green Marzipan1 sheet of rolled out green marzipan
Almond Crunch25g butter
50g dark chocolate 70%
210g streusel
75g almond praline
45g whole almond crushed
2 pinches sea salt

Icing sugar, to serve
Candied almonds, to serve
Small ball of baked almond cream, to serve

Method

Sable a Choux
1. Place pastry between 2 sheets of baking paper and roll out to 2mm-thick.

2. Place on a tray and place in blast chiller for 3 minutes. Using a 3cm-round pastry cutter, cut out 5 discs, then using a 6cm-round pastry cutter cut out 5 discs.

Choux Pastry1. Preheat the oven to 185°C.

2. Combine 100g butter, sugar, water, milk, colour & salt in a large heavy based saucepan and bring to the boil.

3. Remove from the heat and quickly beat in the flour with a wooden spoon. Return to the heat and continue beating until the mixture comes together and leaves the side of the pan.

4. Keep beating over low heat for 1–2 minutes to cook the flour. Remove from heat and cool slightly.

5. Transfer to a large bowl of an electric mixer and beat on medium-high to release the heat.

6. Add the eggs one at a time beating well between each addition, continue beating until the mixture is thick and glossy.

7. Lightly grease two oven trays with extra cold butter and then wipe off excess using paper towel. Using a 3cm circle cutter; dip top in flour and mark 5 rings spaced apart on one of the trays.

8. Using a 6cm round pastry cutter; dip top in flour and mark 5 rings spaced apart on the other trays.

9. Spoon choux mixture into a piping bag and pipe large and small balls of choux onto flour stencils on trays all the way to edge of stencils.

10. Place discs of sable a choux on top of piped choux balls.

11. Bake the small choux buns in oven for approx 16 minutes until golden and hollow when tapped and sable pastry has cracked on top.

12. Bake the large choux buns in oven for approx 25 minutes, then drop oven to 120C and cook for a further 6-8 minutes until hollow when tapped and sable pastry has cracked on top.

Pear Vanilla Creme Patissiere
1. Place the pear puree, apple juice and vanilla in a saucepan until it just comes to the boil, remove from heat.

2. Combine egg yolks, cornflour and sugar in a large bowl, whisk until combined and smooth.

3. Gradually whisk hot puree mixture into egg mixture. Return mixture to saucepan, and whisk continuously over medium-high heat until the custard is thick and flour is cooked out.

4. Transfer custard to a large bowl, cover closely with cling film to prevent a skin forming and place in blast chiller for 3 minutes. Remove from chiller and gradually whisk in butter. Cover closely with cling film and refrigerate until needed.

Pear Gel1. Place pear puree and sugar in a saucepan, cook over medium heat for 1 minute, whisk in pectin and gellan and bring to the boil and boil for 1 minute whisking continuously.

2. Pour into moulds and blast chill for 5 minutes or until set, then transfer to fridge until ready to use.

Green Chocolate Squares
1. Carefully cut five 4cm x 4cm squares of chocolate using a knife, then peel chocolate square off the plastic strip
.

Pear Mousse1. Place cream in a small bowl of an electric mixer and beat until soft peaks. Place crème patissiere and mascarpone in a small bowl of electric mixer and beat until combined. Remove from mixer. Using a plastic spatula, gently fold cream into crème patissiere mixture. Spoon into a piping bag and refrigerate until ready to use. Spoon remaining crème patissiere into a separate piping bag and refrigerate until ready to use.

Green Marzipan
1. Using a 5cm-round pastry cutter, cut 5 discs from green marzipan.

Almond Crunch
1. Melt chocolate and butter together in a bowl over simmering water. Remove bowl and add praline, almond and salt, mix well.

2. Place between 2 sheets of baking paper and roll to 4 mm-thick.

3. Using a 7.5cm round cutter, cut out 5 discs.

ASSEMBLY

1. Pipe pear crème patissiere into small choux balls without bursting the top until choux bun is full and heavy. Insert a small ball of baked almond cream to plug, dust with icing sugar.

2. Pipe pear mousse into large choux ball and fill 1/3rd full, press in a pear gel and push up into bun without bursting the top of choux buns, pipe in more of the pear mousse to fill completely until choux bun is full and heavy.

3. Place almond crunch disc on a gold serving disc, top with a large filled choux bun using a little of the mouse to stick it down.

4. Place green marzipan disc on top of large choux bun.

5. Place a square of green chocolate, shiny side-up, on top of marzipan disc.

6. Place small choux ball on top of green chocolate square, using a little of the crème patissiere to stick it down.

7. Place candied almond on top of choux ball, stick with a small amount of crème patissiere.

Chocolate Cake Recipe Ingredients :

3/4 cup margarine, @ rm temp
1/4 cup sugar
1/2 cup liquid egg, substitue @ rm tm
1 liquid sugar, substitue equal
1 to 1/3 cup sugar
2 tsp vanilla
2 cup cake flour
2 tsp baking powder
1/4 cup instant dry milk
1/3 cup cocoa
1 cup water, @ room temperature


Chocolate Cake Recipe Instructions :

Cream together margarine and sugar at medium speed until light and fluffy.
Add egg substitue, sweetener, and vanilla to creamed mixture and beat at
medium speed for 1/2 minute. Stir together flour, baking powder, dry milk,
and cocoa to blend. Add 1 cup water to creamed mixture along with flour
mixture and mix at medium speed only until smooth. Spread evenly in a 9
inch square pan that has been greased with margarine. Bake at 350 degree F.
for 30-35 minutes or until a cake tester comes out clean and the cake pulls
away from the sides of the pan. Cool to room temperature and cut 4 x 4 to
yield 16 equal servings. Food Exchange per serving: 1 BREAD EXCHANGE + 2
FAT EXCHANGES; CAL: 157 CHO: 16gm; PRO: 3gm; FAT: 9gm LOW-SODIUM DIETS: Use
salt-free margarine and low-sodium baking powder.

SWEET POTATO ROSE PAU (MANTOU)


Inilah hasil kerjatgn dlm mengejar masa

Teruja dengan gambar pau ini di blog Chah saya terus nekad nak buat juga untuk majlis Tahlil dirumah seorang kawan baik saya. Chah pun dapat dari blog WendyTerus saya ke blog  Wendy. (Terimakasih Chah)

BAHANNYA:-
  • 250 gm ubi keledek purple yang direbus
  • 200 gm air
  • 500 gm tepung pau
  • 1 s/teh baking powder
  • 100 gm gula
  • 50 gm lemak sayur (shortening) / Crisco
  • 1/4 s/teh garam
  • 11 gm serbuk yis
CARANYA:-
  1. Lecek keledek purple yang direbus dan ditoskan tadi. (Keledek purple mempunyai tekstur yang lebih lembut berbanding keledek putih dan oren)
  2. Campurkan sedikit baki air rebusan keledek dengan serbuk yis.
  3. Campur dan adun semua bahan kecuali shortening sehingga menjadi doh.
  4. Setelah adunan menjadi doh, baru masukkan shortening dan uli sehingga menjadi doh yang lembut. Jika doh terlalu lembut dan melekit masukkan sedikit tepung pau lagi.  Tetapi jika doh agak melekit tetapi masih boleh dibentuk, teruskan menguli kerana bahan2 tersebut mungkin belum cukup sebati dan tidak perlu ditambah tepung pau.
  5. Tutup bekas doh tersebut lebih kurang 1 jam.
  6. Tumbuk2 adunan doh dan uli lebih kurang 1 -2 minit.
  7. Bahagikan doh pada ketulan2 kecil mengikut anggaran anda untuk sebiji pau (sukatan .Wendy  50gm)  Bentukkan kelopak ros spt yang diterangkan dibawah oleh Wendy . Saya tidak mengikut cara beliau sebab kesuntukan masa, jadi suka2 hati saja lah bentuk kelopak ros tu. Saya bahagikan pada 5 - 6 ketulan sebesar kuku jari, dilecekkan dengan penggelek dgn pelbagai saiz dan arah. Hasilnya, bunga ros yang tak sekata bentuknya seperti yang dibuat oleh Wendy . Janji jadi bunga roskan!!!
  8. Jika ingin diletakkan inti boleh juga. Saya membalut inti kelapa dengan kepingan doh dengan dibentuk kuncup ros bahagian tengah. Kemudian diselangselikan dengan kelopak yang lainnya sehingga membentuk sekuntum ros.
  9. Tutup dan biarkan doh naik lbh kurang 2x ganda lebih kurang 45 minit.
  10. Kukus dengan api yang kuat lebih kurang 12 minit.
INI CARA MEMBUAT KELOPAK ROSE (tiada inti)

*Tip : Flatten out enough dough balls for one round of steaming before flattening out the rest. Keep dough in fridge to prevent over proofing while you slowly form the rose buds. And keep the formed rose buds in the fridge(covered) to slow down the 2nd proofing while you shape. This method does take time to complete.
  1. Bentukkan doh bebola kecil 15gm setiap satu.
  2. Leperkan bebola doh tersebut untuk membentuk kelopak ros..
  3. Dengan hujung jari tekan sekeliling kelopak tersebut.
  4. Susun keenam2 kelopak ros secara bertindih separuh saiznya.
  5. Mulakan dengan menggulung dari kepingan pertama pada lapisan terbawah.
  6. Gunakan kayu penyepit (chopstick) untuk memotong dengan teknik seperti menggergaji untuk mendapatkan 2 kuntum ros dari satu gulungan kelopak tadi.
  7. Letakan kedua2 ros tadi diatas sekeping kertas atau didalam acuan cupcake.
  8. Biarkan doh ini mengembang dua kali ganda dan kukus 12 min.

Green Papaya Salad (Som Tam) is the #1 most popular salad in Thailand, and is especially loved by Thai women - perhaps because it's low in calories and fat, but very high in taste and eating satisfaction, helping you stay slim. This salad recipe is crunchy-delicious, whether served as a side dish/appetizer, or as the main course. Cooked shrimp or crab meat can be added (or cashews if vegetarian), or try eating it as they do in Thailand: with a bowl of sticky rice. ENJOY!

Total Time: 30 minutes

Ingredients:

  • SERVES 4+ (Makes one very large bowl of Som Tam)
  • 1/2 green papaya (see buying instructions below)
  • 1- 2 cups bean sprouts
  • 1/2 English cucumber, sliced into matchstick-like pieces
  • 2 tomatoes, cut into thin wedges or strips
  • 3 green onions, cut into matchstick-like pieces
  • 1/2 cup fresh coriander
  • 1/3 cup fresh basil
  • 1/4 cup dry roasted peanuts, ground or chopped
  • Optional: 3/4 to 1 cup cooked shrimp or crab meat (if vegetarian: add 1/2 to 1 cup fried tofu)
  • DRESSING:
  • 3-4 cloves garlic, minced
  • juice of 1 lime
  • 3 Tbsp. fish sauce (OR 4 Tbsp. soy sauce if vegetarian)
  • 2 Tbsp. brown sugar
  • 1-2 Tbsp. liquid honey (to taste)
  • 1 tsp. shrimp paste (OR 1 tsp. ground bean sauce if vegetarian)
  • 1-2 Thai red chilies (or substitute 1/2 tsp. or more dried crushed chili)

Preparation:

For step-by-step recipe instructions, see: How to Make Green Papaya Salad. Shopping Tip: For this salad, you can try looking for a very green papaya at your grocery store (either 2 Hawaiian papayas or 1 Caribbean type). However, I recommend buying one at an Asian store, simply because it's hard to tell whether a papaya is actually green or in one of the stages of ripening. Asian stores and markets sell green papayas labelled as such. Sometimes they are even sliced open so you can see it is green inside (the seeds will be white).

  1. Stir all "dressing" ingredients together. This dressing should be tangy - a combination of sweet, sour, spicy and salty, but more sweet than sour (this will help balance out the sharpness of the papaya).
  2. Slice the papaya in half lengthwise and crack it open. Scrape out the seeds and discard. Then turn over each half and peel off the green skin.
  3. Use a large-size grater to grate the papaya, or shred it as they do in Thailand: simply make many long cuts into the flesh, then thinly slice off the top layer into a bowl (to see what this looks like, go to: How to Shred Green Papaya.
  4. At this point, Thai cooks preform an optional step, bashing the shredded papaya with a pestle to bring out the juice. Another way is to place the shredded papaya in a food processor and pulse briefly.
  5. Combine the green papaya with all the other salad ingredients in a large bowl, reserving the peanuts and half the fresh basil for toppings. Pour over the dressing and toss well.
  6. Taste-test the salad. If you'd prefer it saltier, add more fish sauce or soy sauce. If you'd prefer it sweeter, drizzle over a little more honey. Toss again.
  7. Portion out into bowls and top with the ground peanuts plus reserved basil. ENJOY!
